猴头菇可以涮火锅。猴头菇的珍贵程度仅次于灵芝,口感接近鸡肉味,但没有鸡胸脯肉那种www.nfysw.com干柴的口感,反而软嫩多汁。一般烹饪选用新鲜猴头菇,先汆烫去酸味、挤干、腌渍,然后油炸,再配不同的酱汁或蔬菜,美味无比。
猴头菇虽然美味,但前期不好处理,不能煮太久,否则会像吃棉花一样没口感,又需靠其他食材提味,烹调方式颇费功夫。因为这样可以减少它的生苦味,引出猴头菇特有的迷人香气。
